Here’s a recipe I’d like to share with you. It’s super delicious and healthy, and a perfect treat to cool you down in the summer heat!
It’s a crispy, crunchy salad with lots of flavor, color and texture that’s full of antioxidants and fiber. The recipe for my Celery, Pear and Parsley Salad with Strawberry Infused Vinaigrette goes like this:
5 stalks of celery
1 large handful of fresh parsley
1/4 cup vinaigrette dressing
Salt to taste
Begin by thinly slicing strawberries and place in a small bowl. Pour vinaigrette over strawberries, then toss with a spoon and set aside. Next, thinly slice celery and place in a large bowl. Chop pear into small chunks and add to celery. After that, you will roughly chop fresh parsley and add to celery pear mixture.
(To ensure the strawberry flavor is being infused in the vinaigrette, you will need to (toss) stir again, making sure all the strawberries are covered with vinaigrette.)
Now, use your hand to thoroughly mix the Celery, Pear and Parsley. And then it’s time to serve.
Use your hand or a large spoon to scoop a portion, about 3/4 cup, of the mixture into a small serving bowl, then take a small spoon and add several strawberry slices around (see images). You may also like to drizzle a little vinaigrette on top. (This dish has a lot of flavor, so it requires very little additional dressing.)
